Incredible day w/the cool winds of the ‘windiest city in America’ – Dodge City! What an amazing Western town – so rich in ‘old’ Western culture – and SUCH diversity b/c of the large meat packing/cattle industry here. Did you know that w/in this small area (Dodge City, Liberal, and Garden City, KS) there are an average of 36,000 head of cattle butchered a day – equalling 40% of the world’s beef consumption! – DANG!!! – I couldn’t wrap my head around it; however, it fully explains the large amount of cattle trucks taking up hwy 50 as we walk West!

Also, a GREAT breakfast/brunch with locals today at a local truck stop Diner! So good to take-in a glimpse of the local flavor w/county sheriff: Dean Bush!
